Highlights: The Live Demonstration: The highlight is witnessing the transformation process: from grating the cassava root to pressing it in the "couleuvre" (a traditional basket) to extract the toxic juice. Watching the cassava flour take shape on the large hot plate is captivating. The Famous "Cassav Crepes": You can't leave without trying their warm cassava crepes. They are filled according to your preferences: coconut, guava jam, banana, or even a savory version (cod, ham). The texture is unique, both firm and melt-in-your-mouth. The authenticity of the place: This isn't a sterile museum. It's a family farm where you can feel the passion and respect for tradition. The welcome is often warm and the explanations are clear. Products: You can buy fresh cassava flour, moussache (cassava starch), or artisanal biscuits on site, perfect for taking home an original souvenir. Things to know: The wait: Since the cassava cakes are prepared fresh right in front of you, there may be a short queue, especially on weekends or when groups are coming. But the aroma makes the wait bearable! The heat: Near the hotplate (the large griddle), it gets very hot. Bring plenty of water. Access: The cassava processing plant is located in the hills above Capesterre. The road is beautiful but winding. My tips for your visit: The "Coco" Cassava Cake: This is a favorite among visitors. The combination of warm cassava and sweetened grated coconut is a pure delight. Observe the technique: Take the time to watch how they spread the flour to form the flatbread without any binders (no eggs or milk). It's an impressive technical skill. The timing: Ideal for an afternoon snack after a hike to the Carbet Falls, which are located in the same area.
